Daniela's Brazilian Coconut Curry

Ingredients:

1 Can coconut milk
Onions, garlic and other veggies if wanted (red peppers, mushrooms, courgette, pumpkin, whatever. I think they work best when sliced into a matchstick shape)
A squirt of tomato puree
Meat or fish/prawns if wanted
Seasoning and fresh coriander if wanted

Method:

Make sauce by sauteing onions and garlic and then adding veggies if using. Add tomato puree and seasonings to sauteed mix: coriender seeds, curry powder, soya sauce etc. Cook for 5 mins or so.

You can then cover and leave this and leave it to cool until later if you are preparing dinner during the day. Then, all you do at night is heat it up and chuck in the meat or fish (if using). Simmer for a good 10-15mins and serve with rice or any grain and a good pinch of fresh chopped coriander.
