Red lentil, tomato and lemon soup

Cheap, quick, healthy, easy and tasty. What more could you want?!

Ingredients:
Half a packet (around 250g) red lentils, washed.
Tin of chopped tomatoes
1 onion chopped
1 clove garlic finely chopped
Stock (as much/little as you like depending on how thick you like the soup)
Lemon/lemon juice

Fry the onion in olive oil or butter on a low heat for around 5 minutes then add the garlic and continue to fry for another minute. Add the lentils and stir to coat the lentils in the fat etc. Add the tomatoes and stock and simmer until the lentils are cooked (around 20 minutes). Add the lemon juice and season to taste. I normally puree it with the hand-held blender as I like a smooth soup but you don't have to blend it if you don't want to.
